P’Somjit is the older brother of P’Jaroon, one of the very first farmers Roots had the chance to work with when we began focusing on Thai coffee. P’ Somjit’s coffee actually won first place of the Green Bean Competition (2018) organized by the Royal Project Foundation. His farm is located in Khun Lao, Chiang Rai. We’re very fond of this area, due to its natural surroundings and untouched forest that isn’t too far out from the city. We like to think of it as our second home, a place where we continue to experiment with different processing and farming practices in order to develop the quality of Thai coffee.
Through the fully wash process, the coffee is picked and pulped on the same day. It is then fermented without water for 12 hours and cleaned to wash off the mucilage before being dried on raised beds for 7-10 days.
