Say hello to 2021 with the Banana & Coconut Cold Brew — our first barista’s choice of the year! Barista Lhing’s inspiration comes from a traditional Thai dessert, banana in syrup, that her grandmother used to make. Lhing starts by making a banana puree to add to the coffee. She also uses a coconut sugar syrup to get the same flavors from the dessert. The highlight of this drink is the coconut milk boiled with pandan that she puts in the coffee to add some complexity to the flavor. This drink is served with the banana in syrup dessert itself, and shouldn’t be missed! Come try it at Roots throughout January.
