About the Farm

Doi Saket is located in Chiang Mai Province and is the oldest coffee-growing area in Thailand. Back in the 1970's, the first Arabica trees were planted here as part of the opium replacement program founded by the late King Bhumibol Adulyadej. Since then, these trees have never been replaced by any other Chiang Mai varietal. As a result, heirloom varietals - particularly Typica - are still commonly found in many old farms within the same region. These coffee trees are approximately 30–40 years old.

The ripe cherries of Typica trees are picked in the morning and the processing begins right away to avoid unwanted fermentation. Only cherries that are in perfect conditions are selected by hand, then they are floated in the water in order to remove the ones that are defective. The coffee is then transferred onto raised beds in a single layer so the cherries are not attached to each other. This ensures even distribution of moisture and lessen the chances of unwanted fermentation. The coffee gets dried in a greenhouse with controlled environment and is left to dry until the moisture of the cherries drops to 10%.

We roast these beans to create a round and smooth coffee with a beautiful note of plum with a sweet aftertaste.
